1 chicken (3-4 lbs.)
Salt &Pepper to taste
Bourbon, divided
1 can (10 3/4 oz.) Cream of Mushroom Soup
1/4 cup water
3 tbsp. chopped fresh parsley
3 tbsp. minced onion
8 oz. sliced fresh mushrooms
2/3 cup sour cream
Crushed Crackers
Noodles or Rice

Directions:
Directions:
Cup up chicken, and place skin side up in large oblong baking dish. Sprinkle with salt, pepper, and a little bourbon. Place in 350 degree oven.
Meanwhile prepare sauce: On top of stove, stir together undiluted soup, water, 1/3 cup bourbon, the parsley, onion, mushrooms and sour cream.
Stir constantly until thick and bubbly. Add more bourbon if desired and salt and pepper tot aste.
Remove chicken frm over. Pour sauce over chicken and continue baking until done about 1 hour.
Sprinkle top with crushed crackers and serve over noddles or rice.
