Carrot Cake:
4 eggs
1-1/4 cps vegetable oil
2 cps sugar
2 tsp real vanilla extract
2 cps all-purpose flour
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
3 cps grated carrots
1 cp chopped nuts (I use walnuts)
Cream Cheese Frosting:
1/2 cp softened butter
8 oz softened cream cheese
4 cps confectioners sugar
1 tsp real vanilla extract

Directions:
Directions:
Preheat oven to 350º Grease and flour 9 x 13 pan. Beat eggs, oil, sugar and vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in nuts. Pour into prepared pan. Bake 40-50 minutes or until inserted toothpick come out clean. Let cool for 10 minutes. Turn on to a wire rack until completely cool.
Frosting: Beat all 4 ingredients till smooth.
