4 skinless, boneless chicken breast halves
salt & pepper
1 tsp. chopped garlic
3 T. olive oil
1 1/2 tsp. dried rosemary
1 can (14-16 oz) Italian-style stewed tomatoes

Directions:
Directions:
Pound the chicken breasts slightly to flatten evenly & season with salt & pepper. Heat oil in a large frying pan.

Add chicken breasts & cook over medium-high heat, turning once, until browned, about 2 minutes per side.

Reduce the heat to medium-low. Add the garlic & rosemary & cook, stirring, until the garlic is softened, about 1 minute. Stir in the tomatoes & their juice along with 1/4 cup water.

Bring to a boil over high heat, reduce the heat to medium, cover & cook until the chicken is white throughout but still moist, 3 to 4 minutes.

If the sauce is a little too liquid, remove the chicken breast to a platter & boil the sauce over high heat until reduce & thickened, about 1 minute. Season with salt & pepper to taste, pour the sauce over the chicken and serve. Serve over noodles.
