3 eggs.
1 cup sugar
1 cup oil (I use 1/2 cup olive oil and 1/2 cup canola).
1 teaspoon vanilla.
1 teaspoon salt.
1 tablespoon baking soda.
1/2 teaspoon baking powder.
1 heaping tablespoon cinnamon.
2 cups grated or ground zucchini (remove center & seeds-do not peel.)
3 cups flour (1 1/2 cup white, 1 cup wheat, 1/2 cup wheat germ).
1 cup chopped walnuts and/or raisins.

Directions:

Beat eggs, slowly add sugar and beat well.
Add oil and vanilla.
Add zucchini.
Add sifted dry ingredients.
Add nuts and/or raisins.

Put in greased loaf pans.

Bake at 325 for 1 hour.

I have modified this recipe so that it has less sugar and added some healthy wheat germ! My sister in law (Kathy) thinks it's wonderful!!!
