4-6 frozen/fresh chicken breasts, broiled
2 bags frozen broccoli, cooked
1 c. shredded cheddar cheese
2 cans cream of chicken soup
3/4 c. Hellman's mayo
2 tsp. curry powder
1 tbsp. lemon juice
1/2 bag Pepperage Farm Herb Stuffing Mix
1/2 stick butter, melted

Preheat oven to 350º
In a greased 9x13 oven safe pan, layer broccoli, chicken and cheese. Set aside. In a separate bowl, mix soup, mayo, curry, and lemon juice and pour evenly over casserole. In another bowl, combine stuffing and butter and stir until well evenly buttered. Top casserole with stuffing mixture. Cook for 20-25 minutes or until bubbly.

This casserole is my favorite comfort food. Mom made this all the time growing up and it still makes me think of her every time I prepare it. Great to take to friends. It usually lasts just the 2 of us about a week. Great as left-overs!
