3 eggs
2 c. sugar
1 tspn. vanilla
1 c. oil
3 c. flour
1 tspn.each, baking soda, salt and baking powder
2 c. grated zucchini
1 c. crushed pineapple (drained)
1/2 c. nuts
1/2 c. raisins
Directions:
Directions:
Beat together the eggs, sugar, vanilla and oil in a large bowl. Mix in flour, soda, salt and baking powder. Fold in the zucchini, pineapple, nuts and raisins.
Bake in 2 greased and floured bread pans @350º for 1 hour.

This is a really moist bread mix. It is so nice to make 2 and freeze one for later. A great bread to make for bake sales. People used to call me for the recipe!
