6 slices veal scallopini
1 bell pepper, sliced in 1 inch slices
6 to 8 fresh mushrooms, cut in half
1/2 large onion, cut in large pieces
1/2 tomato, peeled, seeded, and chopped
2 chicken bouillon cubes, melted in 3/4 c. water or 3/4 c. chicken stock
1/2 cup marsala wine
1/2 stick butter
salt
pepper
flour
angel hair pasta

Directions:
Directions:
Season veal and dust in seasoned flour. Brown slightly in melted butter. Remove and set aside. In same skillet, saute bell pepper, onion, and mushrooms. Sprinkle 1 tbsp. flour over vegetables. Stir a few minutes more. Lightly brown and add tomatoes. Cook 2 to 3 minutes. Add chicken bouillon or chicken stock and wine. Stir. Return veal to pot and lower heat to simmer. Cover and cook approximately 15 minutes or until sauce thickens. Serve with angel hair pasta. May use chicken breasts pounded thin instead of veal. Serves 2.
