Cheese (Kasseri or Asiago)
1 egg
1 cup flour
Brandy
Lemon

I buy the cheese in wedges and slice to 1/2" thick. Beat egg. Dunk cheese in egg and then coat with flour. I use fajita cast iron skillets but any cast iron pan will work. Preheat with olive oil, just enough to coat bottom of pan. Place cheese in pan and when melted and golden brown, TURN OFF HEAT. Add 1/2-3/4 shot of brandy over top and light with flame starter. Stand away from pan as it will really ignite from alcohols. Wait a sec until it burns off and then squeeze lemon juice on top.
DO NOT LIGHT ALCOHOL WITH BURNER ON.
