PUDDING
16 slices bread
1 tsp. vanilla
1 tsp. lemon juice
1 1/2 tsp. cinnamon
1 can (12 oz..) evaporated milk
1 stick melted butter or margarine
2 cups white sugar
2 eggs
1/4 cup pecans
1/4 cup raisins
SAUCE
1 cup white sugar
1/4 cup water
3/4 tsp. grated lemon peel
1/2 cup margarine
1 egg (well beaten)
3 Tbsp. lemon juice.

PUDDING: Preheat oven to 350 degrees. In a large bowl, break bread into medium-sized pieces. Add vanilla, lemon juice, cinnamon, milk, butter and sugar. Stir gently until mixed. Add eggs and stir gently. Add pecans and raisins. Bake in a 2 quart casserole for 20 minutes or until knife comes out clean. Serve warm with lemon sauce.
SAUCE: Combine all ingredients in medium saucepan. Heat to boiling over medium heat, stirring constantly. Pour warm sauce over pudding immediately before serving.
Serves 8-10
