1 1/2 c. instant white rice, uncooked
1 1/2 c. hot water
1 Tbsp. taco or fajita seasoning
4 small boneless chicken breasts
1 green and/or red peppers, cut into strips
1/2 c. taco sauce or salsa
1/2 c. cheese, shredded

Fold up sides of each of four 18x12 inch sheets of heavy-duty foil (non-stick works best). Spray with cooking spray. Combine rice, water, and seasoning. Then divide evenly into center of foil. Top with remaining ingredients. Fold up foil sides, sealing the packet, leaving room for heat circulation inside. Place on cookie sheet and bake at 400º for 30-35 minutes or until chicken is cooked through.

I found that the chicken cooks faster if you slice into strips first. I like to make these for the guys when working in the field, they are easy to take right to the field as is. Just bring along extra toppings, such as lettuce and sour cream! We also like the fajita seasoning over taco seasoning.
