1 good sized bunch of kale (roughly 1 pound)
1 tablespoon peanut or other oil (peanut has a high smoking temperature)
2 cloves, or roughly 2 teaspoons of minced garlic
1/4 teaspoon salt
1/4 cup water

Directions:
Chop off tough stems of kale. Cut leaves in half lengthwise, splitting stems. Then stack leaves and cut crosswise in 2" strips. Heat oil until hot in wok or deep skillet which can tolerate high heat. Add garlic and saute for 15-20 seconds; stir to avoid browning. Stir in water and salt, bring to boil. Add kale and toss to coat leaves, then cover, reduce heat, and steam for approximately 6 minutes. Kale should still be bright green but fairly tender.
