2 oz. Cream cheese
1/4 tsp. flavoring of your choice (mint, lemon, almond, etc.)
1 2/3 c. Powdered sugar
Food coloring (color and amount you desire)
Granulated sugar

Directions:
Directions:
Have cheese at room temperature and mash with wooden spoon. Add flavoring and food coloring. Mix evenly. Add sugar a little at a time and then knead into a ball with your hands. Pinch off a pieces and roll into marble sized balls. Roll into granulated sugar then press into mold. Unmold at once on waxed paper by tapping the back of the mold to make the mint come out.
Refrigerate until ready to serve. Makes 40 to 50 mints.
