10 eggs, beaten
1 pint heavy whipping cream
1/4 cup mayo
1 tsp Cavender's seasonings
1 tsp chives
1 tsp parsley

4 cups grated cheese (cheddar, Monterrey Jack, or swiss)
1 lb cooked breakfast sausage or bacon
2 9inch uncooked pie shells

Directions:
Directions:
Whip together first 6 ingredients and set aside.

Layer 1 cup cheese, 1 cup meat, and 1 cup of cheese in each pie crust. Divide the egg mixture between the two quiches.

Bake at 350F for 1 hour or until the center is puffed.

Southwestern version - add green chiles and use hot sausage and Monterrey Jack cheese.

Vermont version - add 1 chopped granny smith apple to sausage when cooking and use maple sausage and cheddar cheese.

French version - use bacon and swiss cheese.
