4-5 lbs of russet potatoes
1 stick of butter @ room temp
1 small container sour cream (8 oz)
1 package cream cheese @ room temp
Approximately 1 – 1 ½ cup grated cheese (I use any type of cheddar)
3 – 4 scallions chopped; include green tops (or to your taste)
5 – 6 slices cooked bacon, crisp and broken into pieces
Salt and pepper to taste
Buttermilk if necessary for extra creaminess.

Peel, cut into small chunks and cook 4 -5 lbs of russet potatoes in salted water until fork tender.
Drain, return to pot and cover so excess moisture evaporates prior to mashing (about 5 minutes).

Mash the potatoes, add all other ingredients, transfer to casserole dish and top with extra cheese, scallions and bacon bits; heat in oven for 15 – 20 minutes @ 350 degrees.

By adding the ingredients in the order above, I can adjust my sour cream and buttermilk in order to get the creamy consistency I desire.
