• Peel and dice potatoes and boil till tender or just before eating stage (I used 5 potatoes)
•Marinated artichoke hearts- use a volume just about equal to the amount of potato
4 -6 TBSP of the marinade from the artichokes
•Chopped parsley – ¼ to ½ cup
•Finely chopped capers – ¼ cup +/-
•Parmesan or asiago cheese (fresh, grated) 1/3 to ½ cup (this measure I am really unsure of – to taste).
• Salt and pepper to taste
•Sun dried tomatoes, cut in ¼ to ½ inch pieces - 1/3 cup +/-
•Roasted red and yellow or orange bell peppers (roast, sweat and peel) – diced. one red and one orange
•2 finely sliced/chopped leeks (pale part only) – fried in olive oil till tender

I added about 4 (-6) TBSP of the marinade from the artichokes to the mixture. Chopped parsley – ¼ to ½ cup – to taste. Finely chopped capers – ¼ cup +/-. Parmesan or asiago cheese (fresh, grated) 1/3 to ½ cup (this measure I am really unsure of – to taste). I think a good Swiss would also be terrific. Ground pepper – to taste, salt to taste, but salt after capers are in. Sun dried tomatoes, cut in ¼ to ½ inch pieces - I used about 1/3 cup +/- . Roasted red and yellow or orange bell peppers (roast, sweat and peel) – diced. I used one red and one orange. 2 finely sliced/chopped leeks (pale part only) – fried in olive oil till tender. Mix all ingredients together well
Bake at 350 degrees for 30 – 40 minutes
