2 eggs
1 c. whole milk
1 c. flour
1/2 tsp. salt
2 tbsp. pan drippings from a roast

Beat together eggs, milk, flour and salt. Pour drippings into 10" glass pie plate, tilt to coat top and sides. Bake at 450º for 23-23 minutes. Say a prayer and watch it rise while cooking. Don't cheat and open the oven!

The Keeley family Christmas dinner always included a standing rib roast and Yorkshire pudding. My mother was always afraid that the pudding wouldn't rise and prayed as she watched it cooking!
