1 and 3/4 cup flour
1/3 cup sugar
2 and 1/2 tsp. baking powder
2 egg whites
1/4 cup unsweetened applesauce
1/2 cup skim milk
1 T. canola or corn oil
Zest of small lemon (optional) - 1 tsp.

Directions:
Directions:
Preheat oven to 400 degrees.

Mix dry ingredients together (sugar, flour, baking powder).

In a separate bowl, mix together all wet ingredients (egg whites, milk, applesauce, oil, and lemon zest).

Add wet ingredients gently to dry, just mixing until blended. (Important not to over mix). Batter will be stiff. Fold in 1 cup of fresh or frozen blueberries. Put into muffin cups and sprinkle top with a little sugar.

Bake 400 degrees for 20-25 minutes or until top is gently brown.

Makes either 6-7 jumbo muffins or 12 regular size muffins.
