12 oz. 60% Cacao Bittersweet Chocolate Chips
2 tbsp. butter
2 cups heavy cream
4 eggs, room temperature
2 tbsp. sugar (+ more if needs to be sweeter)

Directions:
Place beaters and metal mixing bowl in freezer for 10 minutes to prep. Take chilled bowl and beaters, whip the cream to form light peaks. Set aside in the refrigerator. Melt the chocolate chips and butter in a large mixing bowl set over barely simmering water - cool until room temperature, should remain liquid. Meanwhile, whip the eggs with the sugar until very fluffy and thick, about 10 minutes. Gently but swiftly stir in the beaten eggs, then fold in the whipped cream. Pour or spoon mixture into cups or bowls, and chill until firm, about 2 hours.
