One jar of grape leaves (ethnic food section)
1/2 cup olive oil
4 green onions, finely chopped
1 cup long grain rice
Juice of 1 lemon
2 tablespoons finely chopped fresh dill
2 tablespoons finely chopped fresh mint
2 tablespoons finely chopped fresh parsley
1 to 2 teaspoon sea salt
1/2 cup water
1/2 teaspoon freshly ground black pepper
1/3 cup olive oil
3 to 4 cups water

Rinse grape leaves and set in colander to drain. Heat 1/2 cup olive oil over medium heat and saute onion until soft. Add rice, half of the lemon juice, herbs, salt, pepper, and 1/2 cup water. Increase heat and bring to a boil. Boil for 2 minutes and turn off heat. Allow the filling to sit for 5-10 minutes. Place one teaspoon of filling at the stem of a grape leaf and roll, tucking open edge into the roll as you go. Don't try to roll too tightly because the rice will expand with cooking. Continue until filling is used up. Line the bottom of a pot with any unused grape leaves and place rolls seam side down in the pot in layers. Add 1/3 cup olive oil and 3-4 cups water (enough to reach the top of the rolls). Place a glass plate on top of the rolls to hold them securely (this is not essential and I have done it with and without the plate) and bring to a full boil. Cook for 20 minutes or until rice filling has absorbed much of the water and the grape rolls have expanded.

Serve with lemon wedges,Tzatziki,hummus and olives for an amazing vegetarian meal. Add pita and lamb kabobs for a Greek dinner.
