1 1/2 pounds freshly ground lamb
1/4 cup minced scallions
2 tablespoons red wine vinegar
1 tablespoon minced garlic
3/4 tablespoon kosher salt
1/2 tablespoon freshly ground black pepper
1/4 tablespoon cumin
1/8 tablespoon cinnamon (optional)

Gently mix lamb with all other ingredients until evenly distributed. Shape into small rolls about 3 inches long and 1 inch in diameter. For best results, cover and place in fridge for 1 hour. To grill on outdoor grill: place two rolls side by side and gently push skewer through both rolls 1 inch from the ends. Repeat with a second skewer 1 inch from opposite ends to keep kabobs from breaking apart on the grill. Grill over direct heat with lid closed until browned; 5 - 7 min turning 2 - 3 times. OR grill without skewers on your George Foreman grill in the kitchen, it works swell!

Serve with Yogurt Tzatziki sauce. Accompany the meal with pita bread, hummus, peppers, onions and tomatoes drizzled with olive oil and lightly salted. If you are feeling really inspired, add some Dolmathakias for a Greek feast!
