8 medium sized potatoes, red or yukon
1/4 cup wine vinegar
1/2 teaspoon tarragon
1 teaspoon salt
2 tablespoons consommé or beef broth
1 tablespoon chopped parsley
1/2 teaspoon pepper
2 tablespoons dry white wine
1/2 cup oil

Directions:
Directions:
Cook potatoes in salted water until tender, about 30 minutes. Drain and slice into about 1/4 inch slices. Can peel or leave skins on.
Mix all other ingredients together and pour over warm potato slices.
Serve warm or chilled.
