1 lb. lean ground beef
1 small onion diced
1 can creamed corn
6-8 cups of prepared mashed potatoes (instant or from scratch)
1 cup shredded cheddar or Colby cheese

Directions:
Directions:
Preheat oven to 350º. Brown ground beef with diced onions until meat is no longer pink. Drain grease.
In a large casserole dish place 1/2 of the mash potatoes. On top of this add the cooked drained ground beef with onions. Pour the can of creamed corn on top. Now add the other half of the mashed potatoes. Sprinkle the cheese on top. Heat in a 350º oven for about 30 minutes or until cheese is melted. Salt & pepper to taste.
