1/2 lb. Stilton softened (Blue cheese)
1 stk. butter, unsalted
1 1/2 c. dry white wine
4 tsp. dried green peppercorns
1 c. heavy cream
4 tsp. minced parsley
2 1 inch ribeye steaks
watercress

Directions:
Directions:
In a bowl, cream together cheese and butter until smooth. In a saucepan, boil wine until reduced by 1 tablespoon. Add cream and boil until reduced in half. Reduce heat to moderately low. Whisk the cheese mixture, a little at a time, into the cream mixture and whisk in parsley. Remove the pan from heat and keep warm. Season steaks with salt and pepper. Grill 4 to 5 minutes on each side. Let steak stand on cutting board 10 minutes. Slice thin and serve with Stilton sauce and watercress.
