2 C. flour
1 T. cocoa powder
Scant 1 C. confectioner’s sugar
14 T. very cold butter, cut into pieces
Pinch of salt
2 egg yolks, lightly beaten with 1 T. water

3 T. unsalted butter
2 C. crushed raspberries with sugar, to taste

Directions:
Directions:
Place all the dry ingredients into a mixing bowl. Add the butter and rub in with your finger tips until the mixture resembles fine breadcrumbs. Make a well in the center of the mixture and add the egg yolks and water. Mix with a wooden spoon until you can’t then knead by hand to form a ball. Cover and refrigerate for at least 2 hours. Roll out the pastry and line the baking pan with it. Fill the shell with weights or beans and bake in a pre-heated oven at 350 for 15- 20 minutes.
Filling:
Heat the cream without boiling it and pour over the chocolate; stir well. Add the egg yolks and butter. Spread the raspberry/ sugar mixture over the shell and then pour the filling mixture into the shell on top of the raspberries. Refrigerate for 1 hour.
