1 cup all purpose flour
1 cup whole wheat flour
1Tbsp. baking powder
1/2 Tsp salt
1 cup shredded cheddar cheese
1/2 cup corn niblets
1 cup milk
1 apple, unpeeled
1/4 cup honey
1/4 Tsp baking soda
1/4 cup water

Directions:
Directions:
Combine the flours, baking powder, salt, shredded cheese and corn in a bowl and set aside.
Grate the unpeeled apple using a coarse grater. Add the apple to the milk and honey.
Mix wet and dry ingredients together until just barely combined. You may still see some streaks of flour. Quickly stir together the baking soda and water and add it to the batter. Let batter sit for 10 - 15 minutes.

Heat oven to 350ºF. Pour rested batter into a greased loaf pan. Bake for 45 - 50 minutes. Bread is done when the loaf is golden and a skewer poked in comes out clean.

Cool slightly then turn onto a wire rack to cool completely.
