Broccoli-Rice Quiche Recipe

1/2 cup chopped onions
2 packages (10 Oz) frozen broccoli
1 T canola oil
3 cups hot cooked rice
11/2 cups grated cheddar cheese (6oz)
6 eggs
1 tsp salt
1/2 cup whole milk
1/4 tsp pepper
4 oz chopped mushrooms

Directions:
Directions:
Heat saucepan and add 1 T canola oil. Stir in onions and broccoli and cook for app. 5 minutes. Drain well and set aside.
In a medium bowl combine:
3 cups rice
3/4 cup grated cheese
2 eggs slightly beaten
1/2 tsp salt
Press firmly and evenly over the bottom and sides of a well greased 9 inch quiche and or pie pan

Heat saucepan and add 1 T canola oil. Stir onions and broccoli and cook for app. 5 minutes. Drain well and set aside.

Beat remaining 4 eggs slightly
Stir in milk, pepper, mushrooms and remaining 1/2 tsp salt
Add in cooked onions and broccoli
Spoon mixture into crust
Bake at 375 degrees for 20 minutes
Sprinkle with the remaining 3/4 cup of cheese and bake for 10 minutes longer.
Remove from the oven and let cool a few minutes before cutting
