3 (.25 ounce) packages active dry yeast
1 cup warm water (110 degrees)
8 cups flour
1 1/2 cups white sugar
2 t. salt
6 egg yolks
1 cup butter, melted
1 1/2 cups warm milk
1 cup golden raisins
2 eggs whites, beaten

In a small bowl dissolve yeast in warm water, let stand until creamy ( about 10 minutes)

In a large bowl, mix together flour, sugar, and salt. Make a well in the center of the flour and pour in yeast mixture, egg yolks, butter and warm milk. Stir until a soft dough forms. Turn on to a lightly floured surface and kneed until smooth and supple, about 6 minutes.

Lightly oil a large bowl, place dough in the bowl and coat with oil, cover and let it rise in a warm place until double its size. (about and hour)

Deflate the dough and turn out on to a floured surface, kneed in the raisin. Divide the dough into two equal pieces and form into loaves.. Place the loaves into a 9x5 loaf pan. Cover with a damp cloth and let it rise until double its size

Meanwhile preheat your oven to 350 degrees

Brush the risen loaves with egg whites. Bake for 30 to 45 minutes or until golden brown.
