Citrus Rice Salad Recipe

2 Cups of water
1 Cup of Uncooked rice (I used Jasmine)
1 tsp salt

1/4 cup fresh orange juice
1/4 cup fresh lime juice
1/2 cup olive oil
Grated Orange Peel(from the rind of what you squeezed)
Grated Lemon Peel (from the rind of what you squeezed)
1/4 tsp cinnamon

15 cherry tomatoes, halved
1/2 cup of green onion (or red onion)
1 Small to Medium Cucumber
1/4 cup chopped fresh mint
8 oz of feta cheese

Directions:
Directions:
Make Rice. Let sit on counter and cool to room temperature.
Combine all of the fruit ingredients, and wisk in a bowl to blend.
Cut up all of the last ingredients. Once rice is cool, add to the rice. Add dressing, toss to blend. Serve it at room temperature.

You may make in advance and refrigerate prior to serving. This is good up to two days after creating. If you serve after refrigerating, make sure to take the dish out of the fridge to bring it up to room temp.
