Before you start these, make your vanilla sugar, for rolling a few days ahead of time. Place 2 cups of powered sugar in a jar with a vanilla bean, seal and shake, then let it sit.

2 1/8 cups flour
pinch of salt
7/8 cups of butter
1/2 cup confection sugar
1 egg
3 t.vanilla sugar
1 1/4 cups of ground almonds

Directions:

In a large mixing bowl, combine flour, and salt. Cut the butter in, mix using you hands.

add the confection sugar, egg, vanilla sugar and almonds, mix well. Place the dough in the refrigerator for 30 minutes.

Divide the dough into several parts. Make rolls approx. one inch thick.,cut into one inch pieces and bend the pieces into a semi circle ( like a croissant).
Place the kipferi on a baking sheet and refrigerate for 15 minutes,

Bake at 400 degrees for 10 to 15 minutes. When done remove, while still warm, dip cookie in your vanilla sugar.

Another childhood memory. Mom (Aunt Frieda) and Nana (Karbath) made these at x-mas. Cookies are crisp and good.
