1/4 c orange juice
1 1/2 T. cornstarch
1 lb. chicken breasts, cut into cubes
3/4 c chicken broth
1 1/2 T. soy sauce
1 clove garlic, minced
1 1/2 tsp. ground ginger
1 1/2 c snow peas
1 bell pepper in strips
3/4 c green onion
1 c frozen broccoli, thawed
1 medium carrot, thinly sliced
white rice

Directions:
Directions:
Combine orange juice and cornstarch/ Mix well. Stir in chicken and chill for 2 hours.

Drain chicken. Combine broth and soy sauce.

Heat oil over medium heat. Add garlic and ginger. Stir fry for 30 seconds. Add chicken. Stir fry for 3 minutes. Add veggies. Stir fry until crisp tender - about 5 minutes. Stir in broth mixture.

Serve over rice.
