4 boneless chicken breast halves, skinned
1/2 tsp. salt
1/4 tsp pepper
2 tbsp. butter
1 green pepper, chopped
1 medium onion, chopped
2 10 oz. cans Rotel tomatoes and chilies
1 10 oz. can cream of mushroom soup
1 10 oz. can cream of chicken soup
12 6 inch corn tortillas, cut into quarters
2 cups or a 8 oz. bag shredded cheddar cheese

Sprinkle chicken with salt and pepper. Place in a lightly greased 9 by 13 baking dish. Bake at 325º for 20 minutes or until done. Cool. Coarsely chop chicken. Melt butter in a large skillet over medium heat. Add green pepper and onion. Saute until just tender. Remove from heat and stir in chicken, Rotel, and soups. Place 1/3 of tortilla quarters in dish, 1/3 chicken mixture, and 1/3 cheese. Repeat 2 more times. End with cheese. Bake 30 minutes at 350º. Serves 8 to 10.
