Ingredients: 2 cups all purpose pre sifted flour 2 eggs 2 tsp olive oil 1/2 tsp salt 1/4 water, if necessary

Directions: |
Directions:Pour flour into a heap in bowl or working surface and make a wide hole in the center. Crack eggs into hole, add oil, salt and mix together with fingers. Gradually fold/work flour into egg and knead to a crumbly dough. Remove from bowl, and knead on floured surface to form a smooth elastic dough (about 8-10 minutes). Add water bit at a time, if mixture seems dry. Cover dough with bowl or saran wrap at least 10 minutes, but can rest up to 1 hour. On clean lightly floured working surface, knead dough approximately 7-8 minutes until smooth and satiny. Cut dough into small 6" oblong pieces. Use hand crank pasta machine (start to feed each oblong thru at #1 - dust lightly with flour, then feed thru # 2, #3, until desired thickness for final past shape. Let rest 10-20 minutes (dries slightly so less likely to stick.). Ready to cook - or cover/store in refrig for later cooking time. |

Notes: Nana would make the pasta, cut into shapes (ravioli, cavatelli, or whatever) and if not for immediate cooking, she would freeze on baking sheets, then store in ziplock bags. Sometimes she used spinach water for "green" pasta!
