4 large potatoes (not the baking kind),
1 medium yellow or sweet onion,
1 egg,
1/4 cup milk,
4 heaping tablespoons flour,
1/2 tbsp. caraway seed,
1/2 tsp. garlic powder,
1/2 tsp. salt,
1/4 tsp.of pepper,
4 tablespoons vegetable oil - one for each pancake

Directions:

1. Peel potatoes and grate with a medium to large grater.
2. Heat milk until hot (be careful not to burn it) or use a microwave (30 seconds).
3. Squeeze all liquid out of the potatoes with your hands and place them in large bowl.
4. Immediately add the hot milk to the potatoes and mix until combined. This prevents them from turning brown.
5. Chop onion into small pieces, 1/4" and smaller, and add to the potato
6. Add the egg, flour, garlic, caraway seeds, pepper and salt. Stir until all ingredients are combined. The consistency should be more like a thick batter than a dough. Add more milk if it is too thick, or more flour if it is too thin.
7. For each pancake, heat 1 tbsp. oil in an 8 or 9 inch non-stick skillet.
8. Pour a ladle full of potato mixture, about 1/4 of mixture, into the skillet and spread out until it is about 1/2 to 3/8 inch thick and 7 inches or more in diameter.
9. Cook on each side, turning only once, until golden brown or darker brown for crispier pancakes.
10. Drain on paper towels
