1 can of Gandules or 1 lb of fresh gandules
1/4 cup of salt pork belly or small pieces of pork
1/4 cup sliced Spanish chorizo
1/4 cup of bacon cut in small pieces
1/2 cup of yellow onions chopped
1/2 of a green pepper chopped
3-4 garlic cloves, crushed
4-6 sprigs of cilantro finely chopped
1/3 cup of Spanish olives and capers
2 packets of sazon goya with cilantro and achiote
2 tablespoons of vegetable oil
2 cups of rice
2 cups of warm water
salt and pepper to taste

In a large cooking pot add the vegetable oil and cook the pork pieces at medium high heat until they are golden brown. Add the chorizo and bacon and as they start to cook add the onions and peppers and continue to cook until the onions are translucent. Add the garlic, cilantro, olives and capers, stir in the sazon Goya, salt and pepper. Add the Gandules.
In a separate bowl, rinse the rice and drain. Add the rice to the Gandules in the pot and add 2 cups of warm water. Continue to cook at medium high heat until the water has reduced to the level of the rice, then lower the heat to low and cover the rice. Continue to cook for about 20 minutes or until the rice is done.
