4 boneless, skinless chicken breast halves
1 1/2 c. breadcrumbs
1/3 c. fresh Parmesan cheese, grated
2 eggs, slightly beaten
1/4 c. milk
4 T. butter, plus 2 T. as needed
1 garlic clove, minced
1/2 tsp. ground pepper
1 c. sliced almonds
2 T. fresh lemon juice
1/2 c. dry white wine
Lemon slices
Capers
1 can whole cranberry sauce

Directions:
Directions:
Place chicken between wax paper and pound thin. In shallow dish, mix together breadcrumbs and cheese. In a small bowl, mix together eggs and milk. Dip chicken in egg mixture then dredge in crumb mixture. In a large skillet, melt butter and garlic. Place chicken in skillet and sprinkle with pepper. Over medium-high heat, brown chicken on both sides, add almonds to one side to brown after turning chicken. Add extra butter 1 T. at a time, if needed. When almonds are golden brown, remove and set aside. To chicken in skillet, add lemon juice and wine; simmer 5 minutes. Do NOT overcook. Place chicken on warm platter; top with almonds and sauce from skillet. Garnish with lemon slices and capers. Serve with whole cranberry sauce.
