14 oz. Firm Tofu
1/4 cup nayonaise (eggless mayonnaise)
2 tsp. Dijon mustard
pinch of red cayenne pepper
1 T. turmeric
1 tsp. dill weed
salt and pepper to taste
1 tsp. chopped parsley
1/4 cup chopped onions
1/4 cup chopped celery
1 T. sweet relish

Directions:
Directions:
1. Drain tofu by placing block of tofu on a plate between paper towels placing a heavy can on top. Leave drain for 10 minutes.
2. Place drained tofu in mixing bowl. Break apart using a fork to a crumb consistency.
3. Add remaining ingredients to crumbled tofu and mix until blended.
4.Spread between 2 slices of 100% whole wheat bread. Add lettuce and tomato as desired.
