2 T butter, divided
cooking spray
1 1/2 # jumbo sea scallops (about 16)
1/2 tsp paprika
1/4 tsp salt, divided
1/2 c fresh orange juice
1 T finely chopped canned chipotle chile in adobo sauce
1 /4 c finely chopped green onions

Directions:
Directions:
Melt 1 T butter in a large skillet coated with cooking spray over med-high heat. Sprinkle scallops with paprika and 1/8 tsp salt. Add scallops to pan, cook 3 min. on each side or until browned. Remove from pan, set aside and keep warm. Add orange juice and chile to pan, scraping to loosen browned bits. Bring to a boil, cook until reduced to 1/4 c (about 1 min.). Add remaining 1 T butter and salt, stirring with a whisk until smooth. Serve with scallops, sprinkle with onions.
Serve with rice - 4 servings
