2 tablespoon butter
1 small green pepper, chopped
1 small to medium zucchini, grated
8 oz. fresh mushrooms, sliced
1 (10 ounce) package frozen spinach, thawed and well drained
1 (16 ounce) cottage cheese, drained (draining optional)
1 1/2 cup grated mozzarella (I use part skim)
4 eggs
1 teaspoon each salt and dill seed

Saute green pepper, zucchini, and mushrooms in butter until mushrooms give up their liquid, then add spinach and stir to combine; allow to cool slightly while doing next step. In a large bowl beat together eggs, then add cottage cheese, mozzarella, salt and dill seed and mix together. Stir in vegetable mixture until well combined. Put into a buttered 10" glass pie pan or similar ceramic or glass dish. Bake at 350, check at 40 minutes. Knife inserted near center should come out fairly clean, top should be golden. Good warm, good cold, best a day later.

This is delicious and very healthy. A cup of cubed ham can be added to it, in which case I would decrease the salt. One of my personal memories of Mary is her telling me, in response to my noticing how great she looked one fall day, how she had learned to eat a lot more vegetables, so I suspect she would have liked this.
