3 - 5 pounds beef roast or stew meat
6 potatoes - peeled and cubed
1 1/2 cups baby carrots
1 small bag frozen peas
1 yellow or white onion - chopped
2 stalks celery - chopped into 1 inch pieces
1 can Beef stock
1 can Rotel Tomatoes
1/2 cup water

Directions:
Directions:
Put roast in crockpot. Cut up potatoes, onions, and celery in to fairly large chunks and place in the crockpot on top of meat. Pour beef stock, water and Rotel tomatoes over roast and vegetables.
Cover, and cook on low for 6 to 8 hours or High for 4 to 5 hours.
1 hour before cooking time is complete add frozen peas, stir and recover.
