1 pound ground turkey
2 cups picante sauce, divided
10 oz frozen chopped spinach, thawed, squeezed dry
2 tsp cumin, divided (can adjust to your taste)
1/2 tsp salt
8 oz cream cheese
12-7 inch flour tortillas
14 oz can diced tomatoes
1 cup shredded cheddar cheese
Optional Toppings: black olives, avocado slices, sour cream, shredded lettuce

Directions:
Directions:
Cook turkey until no longer pink. Add 1 cup of picante sauce, spinach, 1 1/2 tsp cumin, and salt. Cook and stir about 5 minutes, or until most of liquid has evaporated. Add cream cheese and stir until melted. Remove from heat. Spoon about 1/3 cup filling down center of each tortilla, roll and place seam side down in greased 9x13 pan. Combine tomatoes, 1 cup picante sauce and 1/2 tsp cumin. Mix well and spoon over enchiladas. Bake at 350 degrees for 20 minutes. Sprinkle cheddar cheese, and return to oven to melt cheese. Remove from oven. Top with optional ingredients.
