1/2 c. flour
1 t. salt
1/2 c melted butter
21/2 c chicken broth
2 c. cooked uncle ben's quick rice
2 c. cubed cooked chicken (I use a rotisserie chicken)
1 c. fresh broiled mushrooms
1 c. chopped onions
1/2 c shopped ripe olives
1/2 c frozen green peas
3/4 c. slivered almonds

Set oven at 350
Over medium heat, stir flour salt and butter together in saucepan. Stir in chicken broth. Cook until thickened, stirring constantly. Alternate layers of cooked rice, chicken, sauce and vegetables in greased 2-quart casserole. Top with slivered almonds. Bake for 30 minutes.º
