2 - 6 oz. pkg. long rain and wild rice mix (uncle ben's)
1 rotisserie chicken
11/2 lbs sliced fresh mushrooms
2 c. chopped onions
4 garlic cloves, minced
2 large boxes chicken broth
2 T. cornstarch
1 can evaporated milk or I use 1 c. fat free half and half
4 stalks celery chopped
1 c. mini carrots sliced
1 t. chicken base (optional)

Directions:
Directions:
Place the rotisserie chicken, broth, celery, onion, mushrooms, carrots, rice and seasoning mixes in a roaster at 350º or 3 hours.
Remove chicken and debone. Place the chicken meat back into the pot.
Combine the corn starch and milk.
Place the roaster on top of the stove and bring to boil. Add the cornstarch and milk mixture. Cook for 1 -2 minutes or until slightly thickened.
Add additional chicken broth if needed.
