1 thin pizza crust, such as Boboli
1/4 cup olive oil
3 cloves garlic, minced
3 cups (1 1/2 to 2 ounces) packed baby spinach
1 1/2 cups (5 to 6 ounces) thickly sliced mushrooms
1/2 cup drained, roasted red pepper, julienned
1/2 cup paper-thin red onion slices
8 large fresh basil leaves cut into chiffonade
1 (5 ounce) package crumbled goat cheese

Preheat oven to 425º F. Place pizza crust on large baking sheet or pizza pan. Mix oil and garlic, brush 2 tablespoons of the mixture evenly over the crust. Top with spinach, mushrooms, pepper, onion, basil, and cheese. Drizzle with remaining garlic oil. Bake until crust is crisp and cheese begins to brown, about 20 minutes.
