2 tablespoons sesame oil
1 small purple onion, chopped
3 large carrots, cut into 1" chunks
6 medium to large sweet potatoes, partially baked and peeled
1 apple - peeled and chopped
8 cups chicken broth
1/2 stick of butter
3/4 cup natural peanut butter
2 teaspoons dried basil
4 cloves garlic, chopped
1 tablespoons curry powder
1 teaspoon cayenne pepper
Salt and pepper to taste
3/4 cup half and half or coconut milk
Finely chopped chives and walnuts for garnish

Heat sesame oil in soup kettle. Add chopped onion and garlic and cook until soft. Add carrot chunks, partially baked sweet potatoes, chopped apple, and chicken broth. Bring to a gentle boil, then simmer for about an hour or until apples, carrots, and sweet potatoes are soft. Add peanut butter. Puree with hand-blender in soup pot. Add seasoning, butter, and half and half. Simmer another half hour (or longer) to allow flavors to blend. Serve with garnish of chopped chives and walnuts.
