3 eggs
1 c. oil
2 c. sugar
2 t. vanilla
2 c. shredded zucchini
1 c. crushed pineapple, drained

3 c. flour
1 t. salt
1/2 t. baking powder
2 t. baking soda
1 c. chopped nuts, raisins or currents (opt)
2 t. cinnamon
3/4 t. nutmeg

Directions:
Directions:
Beat first four ingredients until thick and creamy. Combine zucchini and pineapple and stir into first mixture. Combine remaining ingredients and stir gently into mixture until blended. Pour into 2 greased 9" x 5" loaf pans and bake at 350º for one hour. Cool 10 minutes and turn out onto wire rack.
