Ingredients: 4 large Green Bell Peppers or 10 to 12 large green cabbage leaves 3 cups cooked white Rice, 1 medium sweet onion chopped into 1/4" or smaller pieces, 3 tbsp. olive oil 1 lb. lean ground beef 24 to 26 oz. Spaghetti ( any flavor) or marinara sauce 1 tsp. garlic powder Salt & Pepper to taste mozzarella cheese slices - optional for stuffed peppers

Directions:For Stuffed Green Peppers - Wash and clean peppers - cut out tops - save tops - clean seeds from inside peppers - put peppers and tops in a 2 quart microwavable square casserole dish ( try to keep tops matched with peppers) add 1/4 cup water and microwave for 8 minutes leave in microwave OR For Stuffed Cabbage Rolls - remove 10 to 12 large cabbage leaves whole from a cabbage - wash and lay in 2 qt. casserole dish - add 1/4 cup water - put in microwave for 6 minutes on high - check to see if the leaves are flexible enough to roll, if not microwave some more. - Saute onions in olive oil until translucent - remove from pan to holding dish - brown ground beef in pan - drain off any fat - add sauteed onions and garlic powder - salt and pepper to taste - saute a few more minutes - combine rice and ground beef in a bowl and mix until rice and meat are evenly distributed For Stuffed Green Peppers - Get peppers from microwave and drain off water - stuff peppers with rice / meat, pat down but do not smash filling, being careful not to tear the peppers - put tops back on peppers - put peppers in casserole OR For Stuffed Cabbage Rolls - Fill cabbage leaves by putting about 1/2 cup of rice/meat on leaf at inside center of thick end of leaf, roll thick end of leaf over, fold in ends to make a roll about 4" long, finish rolling until open end is down and place in casserole dish - do with remaining leaves until the bottom of a 9 3/4" x 9 3/4" casserole is loosely filled with cabbage rolls - pour in as much of the spaghetti or marinara sauce as will fit to 1/ 4"of top of casserole - cover and bake in 350 deg. oven for 30 to 40 minutes
Optional for stuffed peppers - uncover - remove tops to side of peppers and put a slice of mozzarella cheese on each pepper and put back in oven uncovered until cheese starts to melt or starts to brown |
