1 - 3 1/2 lb. chicken fryer, cut into pieces
Salt
Pepper
Paprika
1/2 stick butter

Directions:
Place chicken pieces on a sheet of wax paper, skin-side-down. Season with salt and pepper, turn skin-side-up and season with salt, pepper and paprika (paprika helps the chicken to brown). Melt the butter in a baking pan that is just large enough to hold all the chicken snugly. Place seasoned chicken in the pan with the melted butter, skin-side-down and bake, uncovered, at 350º for 45 minutes. Turn chicken skin-side-up, adding a little extra paprika, and bake another 25 to 30 minutes, until chicken is tender and golden brown. Drain well and serve on a platter.

This is a recipe from Raleigh House, a restaurant in Kerrville, Texas. My sisters and I -- and later my niece -- went to summer camp at Camp Waldemar in Kerrville for many summers. Raleigh House was only open during the summer months to service the camps in the area. Mrs. Martha Johnson, who ran the place, gave my mother Mavis a few of her recipes personally.
