10 ounces of frozen spinach, chopped
1 cup of sharp cheddar cheese, shredded
1 can of cream of mushroom soup
1/4 cup of onion, grated
1 clove of garlic, finely chopped
1 cup of herb-seasoned stuffing
1/4 cup of butter, melted

Directions:
Directions:
Preheat oven to 350º. Cook spinach in boiling water, drain and press out as much liquid as possible. In a large bowl, combine soup, cheese, onion and garlic. Add spinach and blend well. Pour into a greased baking dish. Toss stuffing mix with butter and sprinkle over dish. Bake for about 30 minutes.

A lot of people claim to dislike spinach, yet love this casserole. The recipe came from The Old Stone Inn in Waynesville, NC.
