1 cup White Flour
1 cup Whole Wheat Flour
2 tbsp. Baking Powder
1 tsp. Salt
3 tbsp. Sugar or other Sweetener
1½ cups Milk
2 tbsp. Melted butter or Veg. Oil
1 tbsp. Vanilla Extract
2 Eggs
2 or 3 Ripe Bananas (a little brown is best)

You will need two mixing bowls. In the first bowl combined flour, baking powder, salt, and sugar. Mix well. In the second bowl combined milk, butter or oil, vanilla, and eggs. Mix well. Mash the bananas with a fork until all big lumps are gone. Add flour mixture to the wet mixture and mix well. Lastly, mix in mashed bananas. Warm your skillet or griddle to medium low. Spoon pancake mixture onto warmed skillet to make whatever size or shaped pancakes you desire. Flip pancakes over once they have are light brown color.

This is a recipe that I've perfected over the years of making pancakes every Sunday. I hope you enjoy them and let the kids help mash the bananas and mix the batter. Sometimes I add finely chopped apple with a little cinnamon in place of the banana or in addition to the banana. Also try adding, chopped nuts or chocolate chips to the batter.
