2 cups root beer
1 cup dark unsweetened cocoa powder
½ cup unsalted butter
1 ¼ cup sugar
½ cup packed dark brown sugar
2 cups flour
1 ¼ tsp baking soda
1 tsp salt
2 large eggs
Frosting:
2 ounces melted and slightly cooled (60%) dark chocolate
½ cup unsalted butter
1 tsp salt (really use this and kosher salt is even better-it gives the frosting a sweet and salty taste that’s out of this world-however I sometimes do about ¾ tsp because boys prefer it a little less salty)
¼ cup root beer
2/3 cup dark unsweetened cocoa powder
2 ½ cups confectioners sugar

•Oven 350°.
•Use a Bundt pan for best results and spray with cooking spray (not flavored kind)
•Small saucepan heat root beer, cocoa, and butter on medium until butter is melted.
•Add both sugars and whisk until dissolved
•Remove from heat and cool (it doesn’t have to cool a lot)
•Whisk dry ingredients together in separate bowl
•Beat eggs lightly and then add to cooled cocoa mixture
•Gently fold in flour mixture. It will be lumpy so be gentle and
don’t overbeat because it will cause the cake to be tough. It’s
OK to leave some lumps
•Bake 35-40 minutes
•Cool on rack

•Put all the ingredients for the frosting in a food processor
•Pulse until the frosting is smooth and shiny
Frost your cake!!!

Make with the best root beer you can find. Do not use diet! It’s best after sitting uncut overnight but hard to resist! Good with real vanilla bean ice cream or real whipped cream but it is good by itself…
